Tagliatelle Alfredo with Cold Smoked Salmon Ribbons

Ingredients

Serves: 2–3

  • 250 g tagliatelle
  • 1 × 100 g Woolworths Cold Smoked Salmon Ribbons
  • 50 g butter
  • 200 ml fresh cream
  • 1 small clove garlic, finely crushed (optional, for a modern twist)
  • ¾ cup finely grated Parmesan (plus extra to serve)
  • Salt, to taste
  • Freshly ground black pepper
  • Fresh parsley or dill, finely chopped

Method

Cook the pasta
Bring a large pot of generously salted water to the boil.
Cook tagliatelle until al dente.
Reserve ½ cup of pasta cooking water, then drain.

Make the Alfredo sauce
In a wide pan over low–medium heat, melt the butter gently.
Add garlic (if using) and warm for 30 seconds—do not brown.
Pour in the cream and simmer gently for 3–4 minutes until slightly thickened.
Add the cheese
Lower the heat and gradually stir in the Parmesan until melted and smooth.
Season lightly with salt and plenty of black pepper.

Combine pasta & sauce
Add the cooked tagliatelle to the sauce, tossing to coat.
Loosen with a splash of reserved pasta water if needed for a silky texture.
Fold in the salmon
Remove from the heat and gently fold through the cold smoked salmon ribbons, allowing the warmth of the pasta to soften them without cooking.

Serve
Finish with extra Parmesan, cracked black pepper and fresh herbs.

Serving & Variation Ideas
Add sautéed mushrooms or baby spinach for extra depth
Finish with a squeeze of lemon for brightness
Serve with garlic bread or a crisp green salad
