Chinese Fried Rice with Poached Soy, Ginger and Lime Salmon

Ingredients

  • 3/4 cup dry rice – you need 2 cups cooked rice
  • 2 large green spring onions, chopped – keep green part for garnish
  • One medium carrot – finely sliced with vegetable peeler or finely chopped cabbage can also be used
  • 1 thumb-size piece fresh ginger – finely grated
  • 2 cloves garlic – finely chopped
  • 1 small red or green chili – finely chopped
  • 1 teaspoon salt – taste after adding the soy sauce, if salt is needed
  • 2 tablespoons vegetable oil
  • 2 – 3 tablespoons light soy sauce
  • 1 tablespoon sesame oil
  • Lime juice
  • 1-2 pieces Woolworths Poached Salmon with Soy Ginger and Lime

Method

Gather the ingredients.
Pour the rice into a pot and cover with water.
Bring to the boil and cook the rice until soft.
Drain off the water, rinse under cold water and keep until needed.

Heat a frying pan over medium-high heat and add the vegetable oil.
When the oil is hot, add the onion and carrot, ginger, chili, garlic, followed by the rice.
Cook, stirring, until mixed.
Add the sesame oil and soy sauce.
Stir-fry for a few minutes, using a wooden spoon to break it apart.

In the meantime heat the salmon according to the packet instructions.

Serve the poached Salmon on the fried rice with lime wedges.
Chopped spring onions and chili (optional)
