Salt and pepper squid with Avo mash and Chili and Lime Butter

Ingredients

  • 500 g Woolworths Frozen Patagonian Squid Tubes and Tentacles
  • ½ cup coconut flour
  • ½ cup self-raising flour
  • 2 t salt
  • 2 t black Pepper
  • Vegetable oil for frying

Avocado mash

  • 2 avocados – peeled and mashed with a fork
  • Salt and pepper
  • Juice and zest of 1 lime
  • 1 small green chilli – finely chopped
  • 1 Tube Chilli and Lime Butter (Available at a Woolworths Seafood Counter)

Method

Rinse the content of the packet in cold water. Cut the tubes in small rings.
In a large bowl, mix the coconut flour, self-raising flour, salt and pepper. Keep until needed.
Mix all the ingredients for the mash just before serving otherwise it will go brown.

To fry the squid

Heat enough oil in a pot to deep fry the squid
Take the squid from the cold water and drain thoroughly through a sieve.
Place the squid in the flour mix and shake to coat each piece.
When the oil is hot, fry the squid until light brown in colour.

In the meantime, scoop some Avo mash on each plate. Melt the chili and lime butter and pour into small bowls to serve.

When the squid is ready, remove from the oil, shake off the excess oil and serve on the Avo mash with the butter and a slice of lemon or lime.
