Quick microwave breakfast – egg in the hole!

Ingredients

Quick microwave breakfast is my new quick fix for the kids’ breakfast.

This microwave breakfast is also so versatile and you can literally raid the fridge and add whatever the children like. Here are a few ideas to add to the egg in the bun:

Bacon and cheese
Spinach and feta
Leftover chicken and pizza sauce
Leftover bolognaise
Chopped ham and camembert

You see the possibilities are endless. Best of all the kids can make their own.

One minute in the microwave oven, I mean really, that quick! It’s a winner.

I think this combination will also work in these potted eggs I made last year.This makes it a banting-friendly option. What I love about this idea is that I can prep the bun-baskets the night in advance, just leave the egg off.

Next morning the kids take their breakfast bun, crack the egg open and voila, they
have made their own quick microwave breakfast.

Quick microwave breakfast serves 6

Ingredients

  • 6 crispy sesame buns
  • 2 cups baby spinach – raw
  • 100 g Fairview Chevin
  • salt and pepper
  • 6 pieces Threestreams Trout Ribbons trout
  • roe – optional

Method

Cut a hole in the top of each bun.

Fill with a small handful of spinach.

Cut chevin in 6 slices and place a slice on top of the spinach.

Season with a little salt and pepper.

Crack the egg over the chevin and season again.

Place in the microwave for 40-60 seconds on HIGH. (time depends on how you prefer your egg).

Repeat with the other 5 rolls.

Serve with trout and roe or maybe hickory ham and rocket.
