Hot Smoked Snoek & Sweetcorn Fishcakes

Ingredients

  • 400 g hot smoked snoek, flaked (bones removed)
  • 2 medium potatoes, boiled & mashed
  • 1 cup sweetcorn kernels (fresh or frozen)
  • 2 spring onions, finely sliced
  • 1 small red chilli, finely chopped (optional)
  • 2 tbsp fresh parsley, chopped
  • 1 large egg, lightly beaten
  • ½ cup breadcrumbs (plus extra for coating)
  • 1 tsp lemon zest
  • Salt & black pepper, to taste
  • Oil for shallow frying

For serving:

  • Lemon wedges
  • Tartare sauce or a spicy mayo dip

Method

Prepare the snoek – Flake the smoked snoek into a large mixing bowl, checking carefully for bones.
Mix the base – Add mashed potatoes, sweetcorn, spring onions, chilli, parsley, lemon zest, breadcrumbs, and the beaten egg.
Mix well until the mixture holds together.
Season generously.
Shape – Form into medium-sized fishcakes (about palm-sized). Coat lightly in breadcrumbs.
Chill – Place fishcakes in the fridge for 20–30 minutes to firm up.
Cook – Heat a little oil in a non-stick pan and shallow fry fishcakes over medium heat until golden brown and crisp on both sides (about 3–4 mins per side).
Serve – Squeeze over fresh lemon juice and serve hot with tartare sauce or spicy mayo.

Optional Twist:
Add a spoon of chutney into the mix for a Cape Malay-inspired flavour.
Swap sweetcorn for peas or butternut cubes for variation.
Serve on a bed of fresh rocket with a drizzle of olive oil for a lighter meal.
