Grilled Cape Bream with Lemon-Herb Marinade

Ingredients

  • 2 whole Cape Bream, cleaned and scaled (about 350–450 g each)
  • 3 tbsp olive oil
  • 3 cloves garlic, finely chopped
  • Juice and zest of 1 lemon
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh coriander, chopped
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • ½ tsp black pepper
  • Lemon wedges, for serving

Method

Prepare the fish:
Rinse the Cape Bream and pat dry with paper towels.
Score the fish on both sides with 2–3 diagonal cuts to allow the marinade to soak in.
Make the marinade:
In a bowl, mix olive oil, garlic, lemon juice and zest, parsley, coriander, paprika, salt, and pepper.
Marinate:
Rub the marinade generously all over the fish, inside and out, getting it into the slits.
Let it sit for at least 20 minutes (up to 1 hour in the fridge).
Grill:
Heat up a braai (grill) until medium-hot, or use a griddle pan if indoors.
Place the fish over medium heat and cook 5–7 minutes per side, until the skin is crispy and the flesh flakes easily.
Be careful when flipping to keep the fish intact (a fish basket helps).
Serve:
Place fish on a platter, squeeze over extra lemon, and garnish with fresh herbs.
Pair with a light side like roasted baby potatoes and a fresh tomato-onion sambal.

Serving Suggestion:
A Cape-style meal could include pap (maize meal), chakalaka, or a crisp green salad on the side for balance.
