Garlic Butter Argentinian Prawns (Head-On & Shell-On)

Ingredients

  • 1 kg Frozen Argentinian prawns, head-on & shell-on (defrosted) (Available from a Woolworths Seafood Counter)
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 6 garlic cloves, finely chopped
  • 1 red chilli (optional), sliced
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • Sea salt & cracked black pepper to taste

Method

Prepare the prawns:
Defrost overnight in the fridge or place in a bowl of cold water until thawed.
Pat dry with paper towel.
Use kitchen scissors to cut along the back of each prawn shell and gently remove the vein, keeping the head and shell intact for flavour.
Cook the aromatics:
Heat olive oil and butter in a large skillet over medium-high heat.
Add garlic and chilli, sauté until fragrant (about 1 minute).
Sear the prawns:
Increase heat to high, add prawns in a single layer (work in batches if needed).
Cook 2 minutes per side until shells turn bright red and flesh is opaque.
Finish with lemon:
Squeeze in lemon juice, sprinkle zest, season with salt and pepper.
Toss to coat in the buttery garlic sauce.
Garnish & serve:
Sprinkle with fresh parsley.
Serve immediately with crusty bread for dipping, or over linguine for a full meal.

Chef’s Tips
For extra flavour: Deglaze the pan with 50ml white wine before adding lemon juice.
Serving idea:
Perfect with a simple green salad and a chilled Sauvignon Blanc.
Messy but worth it: Keep shells on when eating – it adds so much flavor!
Provide finger bowls or lemon water for guests.
