Cape Citrus & Herb Rainbow Trout with Roasted Veggies and Chakalaka Butter

South African Inspired – Christmas Rainbow Trout

Celebrate a proudly South African festive season with this vibrant, flavour packed Rainbow Trout recipe, fresh, colourful, and perfect for our sunny Christmas tables!

Ingredients

Serves: 4 | Prep Time: 20 min | Cook Time: 25 min

For the Trout:

  • 4 x Rainbow Trout Portions (skin on) (Available from a Woolworths Seafood Counter)
  • 2 Tbsp olive oil
  • Zest and juice of 1 lemon
  • Zest and juice of 1 orange
  • 2 cloves garlic, crushed
  • 1 tsp smoked paprika
  • 1 Tbsp fresh thyme leaves
  • Salt and black pepper, to taste

For the Chakalaka Butter:

  • 100g butter, softened
  • 2 Tbsp mild chakalaka (store-bought or homemade)
  • 1 tsp chopped parsley
  • Squeeze of lemon juice

For the Sides:

  • 2 cups baby potatoes, halved
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1 red onion, wedges
  • Olive oil, salt & pepper for roasting

Method

Marinate the Trout:

In a shallow dish, whisk together olive oil, citrus zest and juice, garlic, paprika, thyme, salt, and pepper.
Add the trout fillets and coat well. Cover and refrigerate for 15–20 minutes.

Prepare the Chakalaka Butter:
Mix the softened butter with chakalaka, parsley, and lemon juice until smooth. Set aside in the fridge to firm slightly.

Roast the Veggies:
Toss the potatoes, peppers, and onions with olive oil, salt, and pepper.
Roast at 200°C for 25 minutes, or until golden and caramelised.

Cook the Trout:
Heat a large non-stick pan over medium heat.
Place the fillets skin-side down and cook for 3–4 minutes until crispy. Flip and cook another 2–3 minutes until just cooked through.

Serve:
Arrange the roasted veggies on a platter, top with trout fillets, and finish each with a generous spoon of Chakalaka Butter that melts into the warm fish.

Chef’s Tip
For an extra festive touch, garnish with pomegranate seeds and fresh herbs.
Pair with a crisp Chenin Blanc or Sauvignon Blanc for a truly South African Christmas feast.
