BBQ snoek with Roasted Veg and Mustard Mayo - WoolWorths

Ingredients

  • 1 whole snoek – butterflied (Available at a Woolworths Seafood Counter)
  • Salt and pepper
  • Juice of 1-2 lemons
  • 1-2 T olive oil
  • 200 g butter
  • 2 t crushed garlic
  • 1-2 chillies – finely chopped (optional)

To serve

  • sweetcorn mealies
  • sweet potatoes – cooked in water with 1 t salt until fork tender

Other options

  • Boiled baby potatoes
  • Broccoli stems – blanched

Mustard Mayo

  • 2 cups good quality mayonnaise
  • 1⁄2 cup sweet mustard – you can also use Dijon
  • 1-2 gherkins – finely chopped
  • Brine from the gherkins

Method

For the snoek

In a small pot, melt the butter and add the garlic, lemon juice and chillies(if used).
Get the fire started – I use charcoal – the fire must not be mild, so either do all other items
first and just before serving, the snoek.

I prefer to cut the butterflied snoek in two halves, but if your grid is big enough, you can keep
it whole. Use a brush and cover both sides of each half with olive oil. Season with salt and
pepper.

I prefer a grid that can close, it is easier to turn the fish without it breaking.
Spray your grid with Spray n Cook. Place the fish on the grid and brush the top with the
melted butter. Grill for about 5 minutes. Turn the grid and grill the other side, while basting.
When you press on the fish with your finger, it must be firm to the touch, but not hard.
Remove from the heat and eat immediately.

Vegetables

While the fish is grilling, add the sweet potato and mealies on the grid and brush with melted
butter until it starts to brown. Serve hot with more butter.

Broccoli stems – blanched

Mustard Mayo

Mix the mustard and mayo and use some of the brine to get a consistency that you prefer.
Add the chopped gherkins and serve with the grilled snoek and vegetables.
