Herb crusted fish fingers with Basa fillets

Herb crusted fish fingers with Basa filletsTo prepare fish:
Basa fillets (1 x pack with 2 fillets)
2 Tbsp Lemon juice
Salt and pepper

Slice the Basa fillet into even slices – sashimi style
Lay out flat and drizzle with lemon juice, sprinkle with salt and pepper.
Marinate for 30 minutes.

Crumb mixture:
4 Tbsp Stale white bread, crumbed
Chopped dill
Maldon Salt and pepper
Place the bread crumbs in a bowl, add dill, salt and pepper – not too much.

Too make the fish fingers:
Eggs, lightly beaten
Crumb mixture

Dip the fish slices in the flour and make sure excess flour is rubbed off.
Dip the floured fingers in the egg and cover completely.
Roll the fish fingers in the crumbs and ensure it is covered evenly.
Place in deep fryer and fry 3 – 4 minutes until golden crisp.

Serve with Wasabi mayo (ready prepared Wasabi Mayonnaise available at Woolworths) and lemon wedges. Alternatively add greens and fries.
